Introduction

This is a fairly light fruit cake with enough but not excessive fruit in it.
It is spicy - but you could use less spice when making it - and very moist.
It freezes well.

Ingredients

    110g (4oz)margarine
    110g(4oz) 60%less fat margarine
    1 cup brown sugar, loosely packed
    2 eggs
    1 cup cooked mashed sweet potato cooled (nothing added)
    1 1/4 cup SR flour (white)
    1 1/4 cup SR wholemeal flour
    1/2 tsp Baking powder
    1 tsp mixed spice
    1 tsp ground ginger
    4 Tbs skim milk
    375g (13oz) mixed dried fruit

Tips

Steam the peeled diced sweet potato until tender, drain well, cool slightly, and mash until smooth. Do NOT add any milk, butter or anything else.


Directions

Preheat oven 180C
Grease and line a 24cm round cake tin
Cream butter and sugar till light
Add eggs one at a time, beating well
Fold in sweet potato alternately with the flour and spices
Fold in the milk to make a not too soft
Fold in fruit and mix well
Cook in well greased 24cm round pan, lined with baking paper
Bake 1 1/2 hrs at 165C - or until a skewer inserted in the center comes out clean
Remove from oven and Cool on rack
