    6 oz pie crust - 9" refrigerated
    2 tsp olive oil
    1/2 cup onion, chopped
    1 1/4 part skim ricotta
    1 Cup low fat shredded cheddar cheese
    1 Large Egg
    2 Large Egg Whites
    1 Tbs Dijon mustard
    1 tsp dried oregano
    1/4 tsp black pepper
    10 oz frozen chopped broccoli - thawed and well drained
    1 Tbsp grated Parmesan cheese


Preheat oven to 375
Press pie crust into 9" pie plate, refrigerate until ready to use.
FILLING: Heat oil in small pan and saute onion until soft, about 3 minutes.
In mixing bowl, add onions, ricotta cheese, shredded cheese,egg, egg whites, mustard, oregano, and pepper; mix well, fold in broccoli. Spoon into crust and level surface with spoon. Sprinkle with Parmesan cheese.
Bake 35-40 minutes, until knife inserted comes out clean.
Let stand 10 minutes, and cut into 8 servings. Yields one piece per serving.
