Introduction

This is the pasta with avocado recipe -- I just tweaked it by substituting soy milk for the olive oil, and added cooked veggies and sun-dried tomatoes. Number of Servings: 4

Ingredients

    1 avocado, peeled
    3 cloves garlic
    juice of 1/2 lemon
    1/4 C soymilk
    salt, pepper, basil
    2 C pasta shells
    2 C cooked broccoli and cauliflower florets
    chopped sun-dried tomatoes

Directions

Steam the broccoli and cauliflower and boil the pasta.
Puree the rest of the ingredients and toss it all together.
Very filling and pretty, too.

Serving Size: makes 4 servings of 1/2 C pasta plus veggies
