Ingredients

1 1/2 lbs Skinless Chicken Breast cut in 1 inch pieces, all visible fat removed
1 cup chopped Onion
1 cup chopped Celery
1 cup chopped Carrots
1 cup chopped Sweet Red Bell Pepper
2 cans Reduced Sodium Black Bean, drained and rinsed
2 cans No added salt diced Tomatoes
2 cups Kitchen Basics Chicken Stock )Lower in sodium than even the 33% less sodium varieties)
1 Tbl Chili powder
2 tbl Frank's red hot pepper sauce
Cheyenne Pepper to taste
Black Pepper to taste
Tips
Adjust seasonings to taste
Directions
Spray crock pot with cooking spray.
Add all ingredients except hot pepper sauce, cheyenne and black pepper.
Cook on high in crock pot about 9 hours, until chicken thoroughly cooked and veggies soft.
Add last 3 ingredients, stir throughly.
Serve with crumbled blue cheese if desired (not included in calorie count)
