Introduction

Number of Servings: 2

Ingredients

    1 grapefruit
    1 teaspoon honey
    2 teaspoons shelled and finely chopped pistachios


Tips

Try this for an afternoon snack or after-dinner treat.


Directions

Preheat oven to 325 degrees.

Slice the grapefruit in half.
If your grapefruits are tipping over, use a knife to remove a thin layer from the bottom, taking care not to expose the flesh.
Use a paring knife to separate the grapefruit segments (optional). Run the knife between the inner flesh and the white pith between the flesh and rind.
The grapefruit halves on a rimmed baking sheet and top with the honey and chopped pistachios.
Bake for 15 minutes.

Serve warm.




Serving Size: Makes 2 servings, 1/2 grapefruit each

    Never liked grapefruit (too bitter) but this recipe is fabulous! I tried it w/honey on 1 side of my half, and blueberry jam on the other. Both were tasty, but the jam was sweeter so I liked that better. I also topped w/sliced strawberries and grapes (which were particularly good). Thanks, Chef Meg! - 3/4/12

    Please be mindful of any prescription medications that might react with grapefruit or grapefruit juice. I love grapefruit but can't eat it now because I take a cholesterol medication, generic for Lipitor. Read labels on your medications! - 3/28/13
