Introduction

As an ex chef I find no cooking is exact. Just get the vege crisper out of the fridge and see what you can add. The main consideration is to use a low fat Quark or Yoghurt and if you don't like Quorn Mince just leave it out. I only used 6 lasagne sheets in a really big meatloaf tin. Ingredients


    Ingredients:
    Onions, raw, 1 medium (2-1/2" dia) (remove)
    *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" (remove)
    Olive Oil, 1 1tsp (remove)
    Garlic, 2 clove (remove)
    Sweet potato, 1 sweetpotato, 5" long (remove)
    Carrots, raw, 1 cup, grated (remove)
    Canned Tomatoes, 1 can (remove)
    Rosemary, 2 tbsp (remove)
    Thyme, fresh, 1 tsp (remove)
    Bay Leaf, 1 tsp, crumbled (remove)
    *Golder Acre Quark virtually fat free, 200 gram (remove)
    Yogurt, plain, low fat, 200 grams (remove)
    egg white, fresh, 2 large (remove)
    Mushrooms, fresh, 2 cup, pieces or slices (remove)
    *Pasta, Lasagna Noodles, 4 oz (remove)
    Quorn Mince Nutiritional, 400 gram(s) (remove)

Tips

Like all new recipes it takes a bit of time the first time. After that you get the picture and it gets much faster. Took me 20 mins to assemble and 40mins to cook.


Directions

Lightly dry fry the onions and red pepper. If you don't have a non stick pan you may need 3 spray of olive oil at 1 calorie per spray. Add the Quorn Mince and Garlic and Grated Carrot (the grated carrot is a filler to add more bulk). Lightly fry and add the tin of tomatoes. Cook down for 15 mins and add the Bay leaves and fresh herbs and pepper to taste. I also added 3 tsp of tomato paste. If you think it needs a kick add a little balsamic vinegar.
If using standard lasagne sheets pre boil in water. I didn't add oil and yes they stuck a bit but easy to seperate under cold water.

Take your Quark and Yoghurt and mix together with 2 eggs. A pinch of nutmeg is good here!

Start with your tomato mixture and layer in the order of:
Tomato Mix
Sweet potato
lasagna sheet
White Yoghurt Sauce Mix
Mushrooms
Repeat till you have used all.
Save a little white sauce to drizzle on top.
Sprinkle with Chopped Parsley or Basil to serve.

Cook in moderate oven 160deg C for around 40-60mins or till a skewer slides in easily and meets no resistance. Keep an eye on it. All ovens are different and you don't want the bottom to burn. However some darker crispy bits on top are delicious. Enjoy without Guilt!!!
