This spicy, creamy soup is perfect for winter! This spicy, creamy soup is perfect for winter!
Number of Servings: 1


    1 cup butternut squash, cubed
    3/4 cup veggie broth
    2/3 cup milk
    2 tbsp. and sour cream
    2 tbsp. onions, chopped
    1/4 of a chipotle pepper (or, if you're not into spicy, 1/2 tsp. chili powder)


Heat the broth and squash in the microwave for three minutes.

Add all ingredients to your Vitamix and turn it to Variable 1. Quickly turn the speed to 10, then High, and blend for 5 minutes or until good and steamy.

Top with a little cheddar cheese, if desired.

Serving Size: Makes 2 1/2 cups of soup
