Ingredients

    1 Clove garlic (minced)
    1/4 cup red onion (chopped)
    3/4 cup roasted red peppers (chopped)
    2 ounces of light cream cheese
    2 TBSP olive oil
    3 TBSP red wine vinegar
    4-6 drops of hot sauce
    1 tsp Basil
    1 tsp Oregano
    1 tsp ground black pepper
    4 Chicken breasts, split and butterfly (optional, wrapped in rinsed and dried spinach)

Tips

Add 4-6 drops of Franks Red Hot Sauce for desired spiciness.


Directions

Put red onion, garlic and roasted red pepper in saucepan with oil & vinegar simmer uncovered and stir occasionally for 5 minutes.

Add remainder of ingredients (minus chicken) and continue to simmer until cream cheese is blended in and sauce is uniform consistency. Let simmer while you prepare the chicken.

Spray or lightly coat in Olive Oil an oven proof dish, Take split chicken breasts and lay open in dish then cover with sauce and place in oven on center rack.

Cook at 325-350 until Chicken is cooked completely, serve with rice.
