Introduction

This is a modification of another SparkPerson's recipe. That recipe uses only hamburger, white pasta, and canned soup. This one substitutes ground turkey, whole wheat elbows, and tomato sauce respectively, and adds corn and diced tomatoes... on the whole, I think, a bit healthier and certainly lower in sodium. Plus the V8 and vegetables add vitamins and flavor missing from the "vanilla" version.

It's a very quick dinner for when your pantry's empty and you have short notice for dinner.

Ingredients

    1 pound ground turkey, browned
    1 pound whole wheat elbow macaroni
    1 jar tomato sauce, your choice (low sugar preferred, I use Barilla's tomato and basil)
    2 cups low-sodium V8 juice
    1 can (14 ounces) diced tomatoes
    1 cup frozen yellow corn

Tips

The "prep time" is listed as zero minutes because how long does it take to open a can? No slicing or dicing here, just dump in all the ingredients.


Directions

Put on an 8-quart saucepan of water to cook the elbows. While this heats brown the ground turkey.

Cook the elbows according to the package directions. Drain and put back in pot. Add liquid ingredients, turn on heat to Medium, then add the corn, tomatoes, and meat. Stir to mix and heat thoroughly, about 5 minutes.
