Ingredients

    4 cups of (organic) vegetable broth
    1 cup of washed and chopped kale
    1 cup of sliced carrots
    .5 cup of chopped onions
    1 cup canned green lentils thoroughly rinsed
    1 tbsp salt
    2 tbsp chopped parsley for garnish


Tips

Try to use fresh, organic ingredients particularly of you suffer from POTS or MCAD. Canned lentils are used because they can produce less gas than dried. For dried lentils try soaking them in water overnight to remove some of the gas-producing sugars. Rinse thoroughly.


Directions

Spray the bottom of a large pot with extra virgin olive oil and heat to medium. Add chopped onions and saute for 5 minutes. Add carrots and saute for a further 5 minutes, add chopped kale and stir constantly until kale is slightly wilted (about 2-3 minutes). Add broth, salt and rinsed lentils. Cover and simmer for 30 minutes. Serve into bowls and sprinkle with fresh chopped parsley.
