Ingredients

    14 cups water
    2 cups dried split peas (washed
    1 tablespoon olive oil
    2 large onions, chopped
    4 celery stalks, diced
    4 carrots, peeled and diced
    4 garlic minced
    1 bay leaf
    1 teaspoon oregano
    1/8-1/4 tsp black pepper
    1 tsp salt
    1/8-1/4 tsp cracked red pepper

Tips

Soup will thicken as the liquid evaporates. Soup can be pureed if you like a creamier soup.


Directions

Saute vegetables and garlic in olive oil. Add water and split peas. Boil 5 minutes and skim off foam that forms on the top of the soup. Add bay leaf, oregano, black pepper, salt and cracked red pepper. Cover soup leaving lid slighting open to release steam and allow water to evaporate for approx. 1 hour. Check to see if split peas are cooked through. If they are still hard, uncover soup and continue cooking for another 15-30 minutes. Remove bay leaf before serving.
