Ingredients

1 ½ cups blanched almond flour (best results are achieved with Honeyville brand from http://honeyvillefarms.net)
2 tablespoons coconut flour
¼ cup ground golden flaxseed meal
¼ teaspoon celtic sea salt
1 ½ teaspoons baking soda
5 large eggs
¼ cup unrefined coconut oil
1 tablespoon coconut nectar
1 tablespoon coconut vinegar
Tips
You can choose to use honey or agave in place of the coconut nectar, and can sub apple cider vinegar for the coconut vinegar. You could also substitute any other oil of your choice for the coconut oil. However, all the coconut items I used give the bread a very pleasant, slightly sweet taste that my testers loved.
Directions
Preheat oven to 350°
Place almond flour, coconut flour, flax, salt and baking soda in a food processor, then pulse ingredients together.
Pulse in eggs, oil, honey and vinegar.
Pour batter into a greased 7.5" x 3.5" loaf pan and bake for 30 minutes.
Cool and serve.
Please note: If you use a loaf pan that's bigger than the size recommended above, your loaf of bread will not rise to a proper height, it will be wider and shorter than desired.
Serving Size: Makes a loaf you can cut into 12 slices
