Ingredients

    1lb lean ground beef
    1 10oz can Rotel
    1 15oz can Black Beans
    2 8oz cans tomato sauce
    2 cups hot water
    1 15oz can corn
    1 5.5oz can V8 (or you could substitute more V8 instead of tomato sauce, but it was all I had)
    2 tsp garlic salt (to taste)
    2 tsp onion powder (to taste)
    1 tsp chipotle chile powder (to taste)
    1 Tbs ground cumin (to taste)
    Finely shredded cheddar cheese


Tips

We ate about 6 servings and froze the rest. When freezing I always freeze in serving sizes so I don't over do it when reheating. Looking forward to reheating this in the near future!


Directions

Brown ground beef. Drain any grease and return to pot. Add remaining ingredients, except the cheese, and 2 cups hot water. Bring to a rolling boil. Reduce heat and let simmer for about 10 minutes, or until flavors have melded. Sprinkle cheese on top of individual servings.
