Introduction

I cook a lot of chicken in batches and sometimes I have some baked chicken breast that is getting a little old. This little soup is a tasty way to deal with extra chicken. This filling curry soup is KICK YOU IN YO FACE spicy. I enjoy very spicy food, so if you want less heat, i would reduce the red pepper flakes first to keep the flavors in balance. Ingredients

    10 Cups boiling water
    600 Grams cold cooked chicken breast
    1 Bag Frozen Broccoli
    1 Bag Frozen Lima beans
    3 Tablespoons hot Jamaican Curry powder
    3 Tablespoons garam massala
    3 Tablespoons red pepper flakes
    3 Tablespoons minced garlic
    1 Tablespoon cayanne pepper
    3.5 Cups Cooked rice

Tips

You can use a drizzle of olive oil, parmesean cheese, and black pepper as a garnish.


Directions

Chop chicken into half inch cubes. Put everything but the lima beans into the pot and bring it to a rapid boil on high heat. Boil on medium-high heat for roughly 5 minutes, then add the lima beans. Bring back to a boil, and let simmer for 2 minutes. Serve VERY hot in large bowls. If you can eat a full serving of this soup, it is only 243 calories.

    I'd like to make this, but with seitan, or just without a protein. I also like insanely spicy foods. Whoo! - 1/20/12

    Transmigrate: Thanks for the comment! If you want to cut out the protein, or use seitan, I would recommend adding something to replace the layer or flavor, like portabella mushrooms, or salted eggplant. Good sparking!
