Ingredients

5 Pound package of chicken breast
3 Tablespoons Dr. Gonzos Spicy Meat rub
1.5 tsp Kosher Salt
Roasting pan, with drip rack
Aluminum foil
Tips
I chop this chicken into half inch cubes and eat 100 grams of it with 100 grams of brussells sprouts and 100 grams of rice. It is a nice energizing meal.
Directions
Preheat oven to 400 degrees
Remove drip tray from roasting pan and line pan with aluminum foil. Place drip tray on top of foil, and place rinsed chicken breasts on drip tray. sprinkle salt on first, distributing evenly, then sprinkle 3-5 tablespoons of Dr. Gonzos spicy rub (or other seasoning mixture of your choice) such that you get even and complete coverage.
Place in oven and bake for roughly 20 minutes, then turn oven down to 365 degrees for another 20 minutes or until juices run clear. Shut off the oven. Let chicken cool in the closed oven for at least 10 minutes.
Serving Size: Makes roughly 20 lunch size servings (~100 grams) or 10 dinner size servings (~200 grams)
