Introduction

Made in bulk to freeze for easy, healthy breakfasts on busy mornings. Made in bulk to freeze for easy, healthy breakfasts on busy mornings.
Number of Servings: 20

Ingredients

    20-10 inch tortillas
    12 large eggs
    1 lb. ground sausage, drained
    1 large bell pepper
    1 large onion
    20 slices fat free American cheese

Directions

Dice bell pepper and onion to desired size. Saute in pan, stirring occasionally, while working on the egg and sausage.

Fry sausage and drain of fat. Set aside.
Scramble eggs with salt and pepper as desired. Add to sausage mixture.

Once all is cooked, combine together in one pan and mix well.

Heat tortillas in microwave for about 30 seconds.

Place about 1/2 cup of the egg mixture into tortilla. Place one slice of cheese over the egg mixture. Roll burrito style and wrap in wax paper.

Once all burritos are wrapped, put them in a plastic ziploc back for freezing.

When you are ready to eat the burrito, heat in microwave (wax paper may be left on) for about 2 minutes or until hot.
