Ingredients

    Frozen Spinach, 10 oz..
    1/2 cup diced onion
    1/2 cup diced red bell pepper
    1 TBL light olive oil
    4 large eggs
    4 large egg whites
    1/2 cup lowfat milk
    1/2 cup lowfat shredded cheese of your choice
    Dash of salt & ground pepper

Directions

Thaw and drain spinach. Pat dry with paper towel. Saute onion and red pepper in olive oil. Remove from heat. In a medium bowl, whisk eggs, egg whites, salt and pepper, and milk. Combine eggs, onion and peppers, spinach, and cheese.
Pour egg mixture into greased muffin pan, filling 2/3 full.

Bake @ 350 degrees for 15-20 minutes. Makes 8 1 cup servings.
