Number of Servings: 4

Ingredients

    20 ounces halibut fillets , 1-inch thick, 4 oz each
    4 teaspoons lemon juice , fresh
    2 tablespoons olive oil
    1 onion , roughly chopped
    1/2 lb mushroom , roughly chopped
    1 red bell pepper , roughly chopped
    1 1/2 tablespoons hot paprika
    12 green olives , cut in halves or thirds depending upon size



Directions

Preheat oven to 375 degrees F. Spray 10" baking dish with nonstick cooking spray. Place halibut in baking dish. Sprinkle lemon juice over halibut and season with salt and pepper.

Heat oil in medium nonstick skillet over medium high heat. Add onion, mushrooms and bell pepper. Saute until crisp-tender, about 6 minutes. Add olives and paprika and stir until fragrant, about 1 minute. Season to taste with salt and pepper.

Spread vegetable mixture over halibut. Bake, uncovered, until halibut is cooked through, about 20 minutes




Serving Size: serves 4 - 4 oz (1piece) halibut, 1/2 cup vegetable mixture

    Very Good
    This was delicious. The only thing that I added was feta cheese at the end of the cooking time. Thank you for this recipe we would make it again. - 11/22/17
