Ingredients
2 sweet potatoes (raw)
5 cloves of garlic
2 (15 oz.) cans garbanzo beans
1 jalapeno pepper (seeded & minced)
1/4 cup fresh parsley, minced
2 teas. lime juice
1/2 cup Egg Beaters (egg substitute)
1/4 cup all purpose flour
1/4 cup olive oil
salt & pepper to taste
Tips
Keep patties warm in a 350 degree oven, until all have been made (to keep cooked ones from getting cold)
Directions
In a large saucepan (high heat), add sweet potatoes, garlic & enough water to cover by about an inch or two. Bring to a boil. Boil for 15 minutes until potatoes are tender. Drain, and reserve 3 Tlb. of cooking water.
Return the potatoes, garlic & reserved cooking water to the saucepan & mash with potato masher until smooth.
Put in a large bowl.
Add garbanzo beans, jalapeno, parsley, pepper, lime juice, egg substitute, and flour. Mix well.
Refrigerate for 30 minutes.
Remove from fridge, and shape into 16 patties.
Add 1 Tlb. oil to a large skilled & place over medium heat.
Add 4 patties at a time, and cook for 2-3 minutes on each side, until crisp and golden brown.
Repeat with the remaining oil and patties.
Serve hot!
