Ingredients

3 cups Diced Ham, 7 medium to small Potatoes, 1 cup chopped Onions, 3 cups Skim Milk, salt & peper
Directions
Peel and slice your raw potatoes and trim any fat from your ham. I usually use left over baked ham from a previous dinner for this but you can also purchase from the deli in a large chunk, if needed.
Put a layer of potatoes on the bottom of your caserole pan. Add some salt, pepper, ham & onions to this layer. put another layer of potatoes and add more onions, ham and pepper only (no more salt). Add your final layer of potatoes and any left over ham and onions [though i like to keep my ham and onions under this top layer].
Fill your caserole pan to the top of your layers with skim milk (app 3 cups)
Bake at 350 for at least 2 hours. The longer you bake this, the more these wonderful flavors merge and meld into one great flavor. You can bake longer than two hours but do not let your caserole dry out.
Serves app. 8 people. (left-overs for lunch... yummy)
