Introduction

Way more of a kale dish than risotto. Which makes it healthy and omg so delicious! In fact prep is nothing like risotto but somehow the rice is creamy. Way more of a kale dish than risotto. Number of Servings: 6

Ingredients

    1 sweet onion
    1/4 c olive oil
    3c kale chopped
    2 c spinach
    1/2 c brown rice
    3c vegetable stock

Directions

Chop onion and Carmelite in olive oil over low heat for about 30 min.
Add rice and cook about 10 min
Add veggies and broth. Pepper to taste.

Cover and let simmer for 3 hours.
Amazing!
