Ingredients

adzouki beans, dry, 1 cup
kamut, uncooked, 1 cup
Onions, raw, 0.5 cup, chopped
Garlic, 2 cloves, chopped
Sweet peppers (bell), 0.25 cup, chopped
Pepper, black, 1 tsp
Salt, 0.5 tsp
Paprika, 1 tsp
Cumin seed, 1 tsp
Olive Oil, 0.5 tbsp
Tips
Use barley or farro instead of kamut!
Directions
Here’s the recipe for the latest incarnation of the veggie burgers as depicted in the photo.
One cup adzuki beans (soak overnight, boil until mushy –an hour or so)
One cup kamut (soak overnight, cook until very tender –45 minutes or so)
Chop and sauté: one onion, one sweet pepper, a couple garlic cloves. Add whatever spices you want (I used crushed cumin seeds, smoked paprika, salt, pepper)
Mash the adzuki beans and the kamut (or use a food processor, or –like I did this time—coarsely break apart with an immersion blender)
Mix everything together and one or two spoonfulls of whole wheat flour. Form into patties and cook on the skillet
(The first time I did them, the mixture was way too dry, so I had to add a little water and one egg. This time the beans were a lot mushier and it came out perfect without adding any liquid.)
