    1 medium potato
    2 eggs
    Oil
    Salt

usually I'll eat this with refried beans and a couple of flour tortillas


Directions

Chop the potato in small squares
Add the oil to the pot, when hot, add the potato
add 2 spoons of salt
when the potatos are cooked, add the eggs
add 1 spoon of salt
when everything is cooked, retire from the stove and serve

eat warm
