Ingredients

    - 1 serving Nasoya Extra Firm Tofu (I use the already-cubed kind, but whatever works)

    - 1/2 Cup fresh mushrooms, sliced

    - 5 cherry tomatoes, sliced

    - 2 Cups fresh spinach (it shrinks when cooked, which is why so much!)

    - 1 tsp. of garlic, minced

    - 1 tsp. olive oil (as a cooking agent)

    - 1 tsp. soy sauce

    - 1 tsp. lemon juice

    - salt and pepper, to taste

Directions

- Warm olive oil in a skillet, and saute mushrooms, tomatoes, and garlic for about 2 minutes.

- Reduce heat to medium-low, and add spinach, tofu, soy sauce, and lemon juice.

- Cover and cook for 7 minutes, stirring occasionally.

- Remove, and add salt and pepper to taste. Enjoy!

Serving Size: Makes 1 plate
