Introduction

Ingredients

    50g butter
    175g light brown sugar
    2 medium free-range eggs
    350g ripe bananas, peeled
    200g self-raising flour
    1/2 tsp salt
    1/2 tsp bicarbonate of soda
    75g almonds chopped coarsely
    6 almonds, to decorate

Tips

Can use a sugar substitute or half-fat butter to reduce calories. Slice and freeze for calorie controlled snacks.


Directions

Heat oven to 180 degrees celsius and grease 1kg loaf tin.
Cream butter and sugar together until fluffy.
Mix in beaten eggs and mashed banana and beat well.
Fold in flour and bicarbonate of soda.
Stir in almonds.
Bake for 1hr-1hr+15mins, until risen and fluffy.

Serving Size: makes 8 slices
