Introduction

Ingredients

    1 16-oz. package Rigatoni pasta
    3 Large Roma Tomatoes, seeded and diced
    4-6 Large Basil leaves, cut in narrow strips
    4 Garlic Cloves, minced
    1/2 jar Pimiento stuffed green olives (approx. 20),finely chopped
    1/2 cup Extra Virgin Olive Oil

Tips

Serve with tossed salad and garlic bread for a memorable Italian meal!


Directions

Cook pasta per package directions. While pasta is cooking, seed and dice tomatoes, roll basil leaves tightly and slice into narrow strips, peel and mince garlic cloves, chop olives and combine into small bowl. Cover all with olive oil and mix thoroughly. Once pasta is cooked and drained, place back into cooking pot and stir in contents of small bowl. Mix thoroughly, serve in pasta bowls with side of shredded parmesan cheese.
