Introduction

Ingredients

    24 oz Al Fresco Italian style Chicken Sausage (2 packages)
    3 medium carrots, chopped
    3 medium celery stalks, chopped
    1.5 medium onions, chopped
    2 tbsp. minced garlic
    8 cups, reduced sodium chicken broth
    4 cups great northern beans, approx 2 cans
    4 cups fire roasted diced tomatoes, undrained, approx 2 cans
    2 bay leaves
    1 tbsp. Italian seasoning
    2 tbsp. tomato paste
    ~~~
    additional ingredients optional and not included in nutritional values
    ~ditalini pasta
    ~parmesan cheese

Tips

Add salt and pepper at your discretion. This has enough flavor that you do not really need to add any.


Directions

Remove casings from chicken sausage and crumble in a large dutch oven. Heat through. Add chopped carrots, onion, garlic and celery and cook until veggies are softened. Then stir in broth, beans, tomatoes, bay leaves, seasoning and tomato paste. Heat to boiling, then reduce heat, cover and simmer for approx. 1/2 hour.

As an option you can add cooked ditalini pasta and parmesan cheese. (remember, these ingredients are not included in the nutritional values.)
