Introduction

Ingredients

    3/4 c quinoa flakes
    1/2 c amaranth flour
    1 c whole wheat pastry flour
    1/2 c spelt flour
    1 t baking soda
    1 1/2 t baking powder
    1/2 t salt
    1 t cinnamon
    ***
    2/3 c olive oil
    1T pure vanilla
    1/2 c honey
    1/2 t liquid stevia
    2 eggs
    ***
    1/2 c semi sweet chocolate chips
    2 T chia seeds

Tips

*Cookies will spread so make sure you leave enough room for them to grow.
*I find the first batch of cookies take longer than the rest.


Directions

Pre heat oven to 350' F. Mix first section of ingredients (dry) in a medium bowl. Mix second section of ingredients (wet) in a large bowl. Beat until creamy. Combine dry ingredients to wet ingredients. Add chocolate chips and chia seeds. Line cookie sheet with aluminum foil. Drop mix onto cookie sheet 1 T at a time leaving 2-3 inches between cookies. Bake for 10-15 mins or until lightly browned.
