Ingredients

    Water
    1 Onion
    1 raw cauliflower medium or large in size
    raw brocolli roughly equal in size to cauliflower
    2 cans diced tomatoes, seasoned
    1 can beef broth
    1 can carrots
    1 can peas
    1 can Northern Beans
    1 can Butter Beans

Tips

The seasoned tomatoes provide plenty of flavor for this soup but feel free to season to taste.


Directions

In a stock pot add a quartered onion, broken up brocolli and broken up cauliflower. Cover with water and boil until soft, usually about 20-30 min. Lower heat to medium and add diced tomatoes, broth, peas, carrots and drained beans to the pot. Let cook for another 30 minutes. Using a hand blender blend the soup until it becomes smooth.
