Ingredients

1-1/3 cups all-purpose flour
1 cup white sugar
1/3 cup shortening
1/2 cup milk
2-1/2 teaspoons baking powder
3/4 teaspoon salt
3/4 teaspoon vanilla extract
2 eggs
3 Bananas, me1 tsp. cinnamon
Tips
Don't over beat mixture. Mixture might be a little lumpy - but this is ok. Fill cups to top.
Directions
Preheat oven to 350 degrees F (175 degrees C). lightly mist petite baking pans with cooking spray or use paper inserts.
Mix together the flour, baking powder
and salt; set aside.
In a large bowl, cream sugar and shortening until light and fluffy. Add eggs one at a time, beating thoroughly after each. Mash up bananas ans add to mixture.
Add flour mixture alternately with milk, beating just to combine. finally, stir in vanilla. Pour batter into the prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 minutes,
or until a toothpick inserted into the cake comes out clean.
Frost (or not) and enjoy.
Serving Size: makes 60 - 1 oz cupcakes or 16 regular cupcakes
