Introduction

This is a great standby recipe for when I don't really have any dinner ideas. I can throw any type of veggies in here and it all tastes just as well as green beans...I just use them because they're my family's favorite. Ingredients

    1 lb lean ground beef
    2 slices whole wheat bread, ground into crumbs
    2 egg whites
    ¾ cup almond milk
    3 tbsp onion powder
    1 tbsp minced garlic
    ½ tsp ground sage
    ½ cup parsley
    1 tsp sea salt
    Ground pepper
    1 cup green beans (I used frozen)
    A teaspoon of olive oil for coating the pan
    ¼ cup reduced sugar and fat ketchup
    2 tbsp brown sugar

Tips

I line the bottom of my pan with heavy duty foil, then spray with the olive oil ~ much better on clean up. I use a rectangular baking pan with a rack to put my meatloaf on. I just hate seeing something swimming in grease...this way the grease is below in my pan.


Directions

Combine beef, bread, eggs, milk, onion powder, garlic, sage, parsley, salt, pepper, and green beans in a large bowl and mix well.

Spray a thin layer of olive oil on your pan so hopefully nothing sticks. Some people will use a loaf pan, I prefer to form my meatloaf and put it on a rack in rectangular baking pan. Transfer the meat mixture into the pan and put it into the oven for one hour.

While the meatloaf is cooking mix the ketchup and brown sugar in a small bowl.

Once the meatloaf is finish cooking, remove it from the oven and spoon off any excess grease (this is why I use the rack). Top the meatloaf with the ketchup mixture and place back into the oven for another ten minutes.

Remove the meatloaf from the oven and let it cool for five minutes before slicing.
