Ingredients

    1 pound of boneless-skinless chicken breast
    1 cup of fresh sliced mushrooms
    1 can of chicken broth (low fat)
    1/2 cup cooking sherry
    2 tablespoons of extra virgin olive oil
    Salt & Pepper

Directions

Serves 2-4 depending on portions

Tenderize chicken using a mallet. Chicken should be about 1/2 thick. Salt & pepper each side of the chicken. Pre-heat skillet. Lightly brown cutlets in 1 tbsp of olive oil on med-med high heat. Remove chicken and set aside.

A another tbsp of olive oil to same skillet and add mushrooms. Cook about 1 minute on med-high heat. Add chicken broth & sherry. De-glaze bottom of pan. Add chicken back to pan and cook on med-heat for 5 minutes and serve!

This is my favortie meal of all time!
