Ingredients

    1 T olive oil
    1 large shallot, finely chopped
    2 cloves garlic, chopped
    1 (28) ounce can diced tomatoes in juice
    1 (28 ounce) cann crushed tomatoes
    2 cups vegetable stock
    1 to 1/2 ten ounce sack washed spinach
    salt and pepper to your taste

Directions

Saute shallott and garlic in small amount of olive oil.
Add canned tomatoes and vegetable broth
trim stems from spinach and shredd with knife
Stir in spinach and add salt and pepper to your liking

Serving Size: 8 servings
