Ingredients

    1 1/4 pounds of lean ground beef
    1 10oz can of Old El Paso Enchilada Sauce
    1/2 cup shredded Cheddar or Cheddar Jack cheese
    1/2 cup chopped onion
    dash of salt
    dash of black pepper
    12 flour tortillas
    canola oil spray 6 seconds

Directions

brown ground beef and onion then drain any fat, add salt and pepper mix well separate beef into 12 even scoops and roll a scoop inside each of the tortillas. place in a baking dish that has been sprayed for 6 seconds with canola oil pour sauce evenly over enchiladas and top with cheese. Bake at 350 for 10 to 15 minutes until cheese is melted and bubbly.

Serving Size: makes 4 servings of 2 enchiladas each
