    Use organic ingredients when possible
    6 cups Whole Wheat Pastry Flour
    1/2 cup vital wheat gluten
    1tbsp baking powder
    1tsp baking soda
    2 tsp cream of tartar
    1 tsp iodized salt
    1 pkg yeast rapid rise (1 tbsp)
    2 tbsp warm water
    2 cups Buttermilk


Handle dough lightly. Do not over work.


Heat oven to 450 degrees. Double sift flour, wheat gluten, baking powder, baking soda, cream of tartar and salt.. Sprinkle yeast over warm water 105 - 115 degrees, let stand until creamy looking about 5 minutes. Warm buttermilk and agave nectar in microwave 105-115 degrees. (Butter milk will separate) whisk Buttermilk, add Yeast and agave nectar to Buttermilk stir. Cut coconut oil into flour mixture with pastry blender knife and fork until it resembles course meal . Make a well in the center of dry ingredients, add milk all at once, use fork to stir just until moist. place on lightly floured bread board. Knead until smooth adding flour as needed to make soft dough. Cover, let rest 20 minutes. Roll to 1/2 inch thickness. Bake in 400 degree oven 8-10 minutes. Dough may be stored in refrigerator up to one week.
