recipe calls for 3/4 cup raisins, but I substituted with blueberries. It called for 1 1/4 cup all purpose flour, but I used 1 cup whole wheat flour & 1/4 c all purpose flour. Recipe called for 1/4 cup vegetable oil, I substituted with unsweetened applesauce.

Ingredients

    flour
    wheat bran
    sugar
    cinnamon
    baking powder
    salt
    skim milk
    molassess or honey
    vegetable oil or applesauce
    egg whites
    raisins or blueberries

Directions

heat oven to 400 degrees. Spray 12 muffin cups with no-stick spray or line with paper baking cups. Combine dry ingredients, mix well. Add combined milk, molasses (or honey), oil (or applesauce) and egg whites. Mix just until dry ingredients are moistened. Stir in raisins (or blueberries). Fill prepared muffin cups 2/3 full. Bake 20-22 minutes or until golden brown.
For banana bran muffins: Omit raisins, reduce milk to 2/3 cup. Substitute 1 cup mashed ripe banana for raisins.
