    8 c egg beaters
    1 1/2 c skim milk
    10 oz pkg frozen spinach, thawed and drained
    3/4 c diced green bell peppers (can you any color)
    1/3 c sliced green onion
    2 c sliced mushrooms
    salt and pepper to taste
    1 c grape tomatoes sliced in half or tomatoe slices


add all ingredients but tomatoes together, pour into 13x9 casserole. add tomatoe slices or halves on top. Bake at 350 deg until middle just about set-may take about 1 hr -1 hr 15 min or so.

Serving Size: make 8 squares.
