Introduction

Ingredients

    2T Whole Wheat Pastry Flour
    2T Unsweetened Cocoa
    1/4 tsp. baking powder
    3 pkts. Nu-Stevia
    1T coconut oil, melted
    1 T egg whites
    1/2 tsp. vanilla
    1 T. warm water

Tips

I mashed half a banana in the same mug I used to mix the brownie batter. The leftover brownie mixture will make it a little chocolaty. Spread over the top of brownie for frosting. This will add about 50 calories and 12 carbs.


Directions

Combine the dry ingredients in a mug or small bowl. Melt the coconut oil in a separate ramekin. Add egg white and vanilla and oil to the dry ingredients, and mix well. The batter was stiff, so I stirred in about 1 Tbsp. of warm water. Use the remaining oil in the ramekin to coat the inside well. Bake in microwave 30-40 seconds. If you prefer cake-like brownie, cook 60 seconds.

Microwave for 30-40 seconds, and enjoy!
