Introduction

My husband loves to hunt, thus we have elk. This is an easy, tasty, and versitle way to use it. My husband loves to hunt, thus we have elk. This is an easy, tasty, and versitle way to use it.

Ingredients

    2 lbs. elk meat
    3 cups tomato sauce
    1 large onion, chopped or 1/4. c. dried onion
    1/4 c. taco seasoning mix
    1 can black beans

Tips

If you like spicier food, you will want to add a little more taco seasoning.


Directions

Combine first four ingredients in slow cooker. Cook for 6 hours on high. You may need to vary this according to your slow cooker. When finished, the meat will fall apart. Pull the meat apart and add beans. You can use different beans too but I like black the best. Mix all together. Build burrito with tortilla, 1/4 c. fat free cottage cheese, chopped tomato, and lettuce.

Serving Size: Makes 12 one cup servings.
