Ingredients

    3 eggs beaten lightly
    1lb green beans (trimmed and cut into 2 in pieces)
    1 red pepper, cut into strips
    2 cups napa cabbage
    1 cup shiitake mushrooms
    6 scallions (sliced thin)
    2 cloves garlic (sliced thin)
    1 cup bean sprouts
    1tsp toasted sesame oil
    1 tbsp olive oil
    3 oz shredded
    salt

    Sauce:
    2 tbsp low sodium soy sauce
    2 tbsp rice vinegar
    1 tbsp mirin
    2 tbsp grated ginger

Tips

Serve over brown rice or with rice pancakes. Try coconut oil instead of olive oil. Added thai red sauce to my individual serving for added heat!


Directions

scramble eggs, set aside. Heat sesame oil and olive oil over medium heat.
