Ingredients

    1 lb. Breakfast Sausage - regular, browned
    1 Medium Sweet Onion
    1 Large Red Bell Pepper
    1 Small Can Green Chiles
    2 cups Sharp Cheddar Cheese
    6 Eggs
    1 cup Bisquick (dry mix only)
    2 cups Milk
    Tobasco (to taste)
    Salt & Pepper (to taste)

Tips

When mixing the eggs with the bisquick and milk, it is easiest to scramble the eggs first, then add in the bisquick by itself. Mix until smooth and most of the lumps are gone. Then add in the milk. This avoids letting the mixture get too runny on the front end, and saves you from making as big of a mess as I did the first time I made it!


Directions

Brown sausage in skillet. When sausage is almost ready, add in diced onion and red pepper for a quick saute. In a bowl, scramble eggs and slowly add in Bisquick and milk. Here, you can also add in tobasco, salt, and pepper to taste. Layer cheese and green chiles on the bottom of a greased glass baking dish. Add sausage, onion, and pepper mix to the top of that. Then pour the egg/milk/Bisquick mixture over the entire contents of the dish. Bake at 350 for 30-45 minutes.
