Ingredients

    1c or 2 Dozen Wild Onions or a small batch of young Green Onions or Scallions
    2T Water
    6 Eggs
    1-2t Bacon Grease or Butter or Cooking Spray for frying
    Salt and Pepper to taste

Directions

After you have fried your bacon for breakfast, use a little of the melted fat to cook the eggs in.

1. Pick or buy young tender wild oniond or green onions or scallions to equal around 1 cup.
2. Coarsely chop the onions.
3. Place the onions and the water in a cast iron fryer. Cover and cook until they are limp.
4. Add butter or grease.
5 Add eggs. Scramble and add salt and pepper to taste. Do not overcook.
Serve hot.
