Introduction

Two ingredients I needed to use so I looked around (epicurious.com and martha stewart) and made this. Great by itself, over pasta or some other starch (polenta, eg). Two ingredients I needed to use so I looked around (epicurious.com and martha stewart) and made this. Great by itself, over pasta or some other starch (polenta, eg).

Ingredients

    1.5 lbs broccoli rabe, cleaned & trimmed, chopped into 1" pieces

    7 turkey sausage links (~.75 lbs), casings removed.

    5 garlic cloves, sliced thinly

    2 T. sliced almonds

    4 T. olive oil

    red pepper flakes, to taste

Directions

Boil cleaned, trimmed broccoli rabe in salted water for 2 minutes. Drain in colander and press w/paper towels.

Heat oil til shimmering. Add garlic and almonds til browned (~2-3 min). Add sausage and stir til cooked. Add broccoli rabe and cook for 2-3 min.

Serve over pasta, polenta, etc. Serve w/grated parmesan (opt).
