Ingredients

4 cups dry oatmeal
5 eggs, beaten
3 Bananas, over-ripe (if thawed, include liquid)
3/4 cup peanut butter
1/2 cup brown sugar
1 cup chocolate chips
Tips
Buy overripe bananas on clearance. Peel and freeze 3 bananas in each freezer bag. When thawed, they'll have a lot of liquid. Use in recipes.
Directions
Preheat oven to 350. Spray 2x12 cup muffin tins with non-stick spray. Set aside.
Beat the eggs until frothy. Add peanut butter, brown sugar and brown sugar. Blend until smooth and liquid (the more ripe the bananas, the smoother it will blend). Stir in oatmeal and chocolate chips. Blend well.
Fill each muffin cup with approximately 1/4 cup batter until all 24 muffin cups are equally filled.
Bake for 25-30 minutes until light brown edges around muffins.
