Introduction

Ingredients

1 cup frozen blueberries, unthawed & unsweetened
1/4 cup of agave nectar/syrup **
1/4 cup water
1 tsp. arrow root **
Tips
* agave nectar is good on the GI, but you could swap out with honey or maple syrup. Be aware the glycemic index is different for those.
** You could use a starch based binder, but arrowroot will keep the sauce clear. Items such as cornstarch will thicken, but will make it cloudy in appearance.
Directions
In a non-stick saucepan, add blueberries, water * agave nectar and stir.
On medium heat, bring to a boil and reduce to heat to low.
Let cook & reduce for about 4 minutes.
In a small cup, add a splash of water and arrow root. Stir together to make a slurry and add to berrie mixture.
Turn off heat. Serve warm with pancakes, but good cold in desserts.
