Introduction

Ingredients

Base:
1 ½ cups Milled Flaxseed
½ cup Soya Flour
2 tsp Baking Powder
1 tsp Prewetts No-Salt
½ tsp dried Mixed Herbs
½ tsp dried Basil
1 tbsp granulated Splenda
2 tbsp Flora Cuisine (or Olive Oil)
3 medium Eggs
½ cup Water
Sauce:
½ cup Sugar Free Ketchup (or Passatta)
Splash of Light Soy Sauce
½ tsp Prewetts No-Salt
½ tsp dried Mixed Herbs
½ tsp dried Basil
Splash of Tobasco
Pinch of Chilli Flakes
Toppings:
Ό Red Onion, diced
25g fresh Baby Spinach (handful)
30g Button Mushrooms, sliced
40g Greek Feta, sliced
Ό Red Capsicum pepper, diced
50g Green Olives, whole
100g Light Cheddar, grated
Tips
Note: It is better if you add the spinach at the bottom, then pile the other toppings on top.
Note 2: For a low carb meat choice that adds a little zing, I recommend trying thinly cut pastrami meat.
Note 3: If you can't find a Sugarfree Tomato Ketchup, just look for a low carb Passatta. I use Colac's Tomato Ketchup, which I buy online from the Lowcarb Megastore. If you are really struggling to find one, just throw 2 tomatoes into a blender and simmer on the stove with a splash of vinegar for 5 minutes - job done.
Note 4: Other ingredients : I order Milled Organic Flaxseed and Soya Flour online from Holland and Barret's. I get Prewett's No Salt (salt substitute) online from Goodnessdirect.co.uk
Directions
Preheat oven to 210 °C.
1. In a large bowl, mix dry ingredients together for the base.
2. Beat the eggs together using a shaker, or tight lidded jar, then pour into the mixture.
3. Add the Flora (or Oil) and Water to the mixture. Combine well with a large wooden spoon.
4. Let it sit for 2-3 minutes to stiffen slightly.
5. While the mixture rests, grease & line a 12" pizza dish with grease proof paper by cutting out a circle shape, inserting into the pan, and smearing with a little Flora.
6. Spread the base mixture evenly over the pan, using the back of a metal spoon (keep dipping the spoon in water if mixture sticks)
7. Bake for 15-18 minutes until the base is cooked through, firm to touch, and slightly shrunken at the edges.
8. While the base is cooking, combine the sauce ingredients together in a small bowl and prepare the other toppings ready to go on the pizza.
9. When the base is finished, spread the sauce over the base and sprinkle on the toppings.
10. Return to the oven for 10-15 minutes, until the toppings are done.
11. Leave to stand for 1 minute, then cut & serve.
