Ingredients

    1/2 cup margarine
    2 leeks, sliced
    salt and pepper to taste
    4 cups vegetable broth
    1 tablespoon cornstarch
    5 large potatoes, peeled and diced
    2 cups light cream (5%)

Directions

Cook leeks in margarine for about 15 minutes until soft. Add salt and pepper to taste.Prepare vegetable broth and add cornstarch. Add to leeks. Add potatoes and bring to a boil.

Turn down heat, add cream and simmer for 30 - 45 minutes until potatoes are soft.
