Ingredients

    Spring roll wrappers (rice paper, or bahn trang) - 5
    15 small, cooked shrimp
    1 - 1.5 cups cabbage (I like cole slaw mix)
    1/2 of a cucumber, sliced into long strips

    Optional: Soy Sauce or low-sugar sweet & sour sauce

Tips

Fillings are really varied for this type of dish. You could use sprouts, carrots, chicken (instead of shrimp), zucchini or other squashes, shredded lettuces, etc. This recipe is easily doubled.


Directions

Wet the rice paper until it is malleable (work gently or it will break or tear). Lay the paper flat on a working surface. Near the middle of the paper, lay out a slice of cucumber, three shrimp, and cabbage (kind of across the paper, as you would a sandwhich wrap). Carefully, left the edge of the rice paper over the filling, then wrap tightly, folding under the sides as you go until you reach the end to seal.

These are good with soy sauce or sweet and sour sauce.

Serving Size: Makes 5 spring rolls - very filling!
