Ingredients

    3 Slices of Smoked Bacon
    1 medium Green Pepper Sliced
    1 medium Yellow Pepper Sliced
    1 can of Chopped Tomatos
    1 Garlic Clove crushed
    Asda Passata - half carton
    Elmlea Light Double Cream - quarter of 10 fl oz tub
    Cup of sliced Chestnut mushrooms
    Parmesan Cheese grated
    Whole Wheat Pasta

Tips

Add additional chilli if you like a little heat in your dish.
Substitute the cream for cream freche or sour cream to lower the calories. Substitute any of the vegetables with alternatives such as courgette.


Directions

Add Bacon to frying pan, no oil required
Add Green, red pepper & crushed garlic. Gently stirfry & them add the tinned tomatos & chestnut mushrooms.
Simmer for 10 mins, then add the elmlea cream & stir.
Add the pasta to boing water in separate pot for 8 - 10 mins.
Once pasta is cooked, drain & add to the sauce.
Decant the pasta & sauce to oven ready dish & sprinkle the parmesan cheese over evenly.
Place in oven gas mark 6 for 10 mins to brown.
