I've discovered a liking for pumpkin and am now trying all sorts of things with it. These cookie bars are from a pouch with all sorts of goodies thrown in. YUM! Ingredients

    -1 Betty Crocker Pumpkin Spice cookie pouch, mix only
    -2 T Smart Balance Omega Light Spread
    -1 Med. egg
    -2 T water
    -1/2 - 3/4 C canned pumpkin like Libby's
    -25 g chopped walnuts like Diamond
    -1 oz sliced unsalted almonds
    -40 g dried cranberries

Directions

---Melt your butter and then mix all ingredients EXCEPT THE NUTS AND CRANBERRIES together in a large bowl until mixed well. Stir in your nuts and cranberries. Pour into a lightly sprayed 9x13 or smaller glass dish and cook for about 30 minutes at 375 or until a knife comes out clean from the center.
